Đậu phộng hay còn gọi là lạc. Đậu phộng khi rang lên vàng thơm kết hợp cùng với mắm tỏi nữa tạo nên 1 món ăn vặt vô cùng tuyệt vời nhé! Cuối tuần làm dĩa đậu lai lai khi xem fim nà.
Lựa bỏ hạt đậu hư, rửa sạch với nước và để thật ráo. Bắt 1 cái chảo lên bếp, đun nóng chảo, cho vào chảo 2 muỗng canh muối (mục đích: khi cho muối vào khi rang đậu giúp hạn chế đậu tiếp xúc trực tiếp với đáy chảo gây cháy, nhiệt độ ổn định giúp hạt đậu vàng đều hơn). Cho đậu phộng đã ráo nước vào rang đều tay ở lửa nhỏ.
Rang đậu thật đều tay để đậu không bị cháy, rang cho đến khi vàng đều như hình là đạt, sau khi rang không cần bóc mà để nguyên vỏ nhé. Đậu vàng thì tắt bếp, đổ đậu ra rổ lổ nhỏ để loại bỏ phần muối bị cháy. Lựa bỏ bớt phần đậu bị cháy. Rửa sạch chảo vừa rang đậu.
Bóc bỏ vỏ tỏi, ớt băm nhuyễn. Lấy 1 cái chén sạch, cho vào 6 muỗng canh nước mắm + 4 muỗng canh đường + 1 muỗng cà phê bột ngọt. Dùng muỗng quậy đều cho tan đường.
Bật lại bếp, đặt chảo lên bếp làm nóng chảo, cho 4 muỗng canh dầu ăn vào đun nóng, cho tỏi ớt đã băm nhuyễn vào phi vàng. Tỏi vàng thì múc 1/2 ra 1 cái chén nhỏ như hình.
Phần dầu tỏi còn lại trong chảo thì cho nước mắm đã pha vào đun sôi. Cho vài trái ớt trái khô vào đun cho hổn hợp nước mắm cạn sền sệt lại, nêm nếm hổn hợp nước mắm lại cho vừa khẩu vị.
Tiếp tục, cho đậu phộng đã rang vàng vào đảo đều cho thấm nước mắm. Hạ nhỏ lửa đảo đều đậu phộng cho đến khi khô ráo.
Quan sát thấy đậu phỗng đã ráo nước mắm thì tắt bếp, cho phần tỏi đã phi vàng vào, trộn đều.
Để đậu thật nguội, đậu sau khi nguội sẽ cực kì giòn thơm và thấm vị vô cùng hấp dẫn. Đậu nguội hẳn thì cho vào hộp bảo quản nhé. Món này mà lai rai khi xem phim còn chi bằng. Chúc mọi người thành công ạ!
