Quẩy, còn gọi bánh quẩy, giò cháo quẩy (cách gọi của người Nam bộ), là một loại thực phẩm phổ biến ở Châu Á làm từ bột mì, pha thêm bột nở, chiên vừa chín có dạng một cặp gồm thanh bánh dài có kích thước bằng chiếc xúc xích nhỏ dính nhau, ăn bùi và giòn.
Trộn đều bột mì với muối và đường. Cho 10ml nước ấm vào men nở, quậy tan sau đó để nghỉ 5 phút.
Cho ít nước cốt chanh vào bột khai để khử mùi. Cho bột khai vào chỗ nước có ga đã chuẩn bị. Sau đó dùng máy (hoặc tay) trộn đều tất cả các nguyện liệu (hỗn hợp bột mì, men nở, hỗn hợp bột khai) lại với nhau khoảng 1 phút. Sau đó đậy lại.
Quá trình nặn bột này cần được lặp lại 3 lần, mỗi lần cách nhau chừng 20 phút. Sau khi nặn xong 3 lần, để bột nghỉ 2 đến 3 tiếng (tuỳ nhiệt độ, nếu trời nóng bột sẽ nở nhanh hơn và thời gian ủ có thể ngắn hơn)
Lấy bột ra, dùng tay kéo thành cục bột dài và mảnh (chú ý không dùng dụng cụ cán bột, sẽ làm mất bóng khí bên trong làm quẩy kém nở. Cắt bột thành những thanh nhỏ dài chừng 5cm, rộng 1,5cm. Sau đó lấy chút nước dính thành các cặp.
Để lửa lớn đun sôi dầu ăn, sau đó giảm nhỏ lửa xuống cỡ trung bình. Cho quẩy vào rán, chú ý cho ít một vì quẩy sẽ nở rất to và choán chỗ. Có thể dùng đầu đũa tách nhẹ ở giữa để quẩy được nở hơn. Rán quẩy đến khi vàng đều là được.
Bánh quẩy thích hợp ăn kèm với các món cháo chay hay mặn sẽ càng làm cho món cháo thêm phần hấp dẫn.
