Sườn heo mua về đem chặt thành những khúc nhỏ. Cho sườn heo vào chảo sâu lòng, đổ ngập nước, đun sôi khoảng 1-2 phút rồi vớt sườn ra.
Đun chảy đường phèn. Khi đường ngã màu àng nhặt thì cho sườn heo vào đảo đều cho cháy xém các cạnh.
Tiếp đến thêm vào 1/2 muỗng canh chảo đỏ, hành lá và tỏi thái nhỏ, ớt khô nguyên trái. Sau đó đổ nước xâm xấp mặt sườn, thêm 1 muỗng cà phê muối, rim lửa nhỏ khoảng 40-60 phút cho ngấm.
